Virtual Cookie Exchange 2020

 


Every year I look forward to this Blog hop. The Virtual Cookie Exchange has provide us with many tasty treats to share with our family and friends. A big thank you to Carol  from Just Let Me Quilt for hosting us and rounding us up to put on this event.

This is Day 1 so you are in for a treat, just visit everyone to collect their recipes abd your kitchen will smell just as delicious as our own kitchen, It is especially nice at this time of the year to have those wonderful Christmas baking scent floating through the house. Sometimes I wish they would create that scent for the air freshers.

This year I have been treating my family and friends with this recipe. Let's just say we have tested this recipe a number of times leading up to this event. 

Ice Box Cookies

Ingredients

1 cup Butter, softened

1 cup Icing Sugar, sifted

1/2 cup sugar

1 egg

1 tsp vanilla

2 1/2 cups plain flour, sifted

1/2 tsp salt. 

Nuts/ chocolate to top cookies (optional)

Method:

In a mixing bowl cream butter and both sugars. Add egg and vanilla and mix together. Add flour and salt and mix together. Split the mixture into half and roll each half in to a log and wrap in cling film. Repeat with the other half.

Chill logs for at least 2 hours but you can make the dough the day before and chill overnight. 

Preheat your oven to  170 degrees C (350 degrees F) while you prepare the cookies.  

Remove logs from the fridge and slice in to disks ( about 5mm / 1/8") It's is up to you . Just remind if you cut them thicker they will need a little longer in the oven.  Arrange on baking trays leaving space around them. They spread a little bit but not too much.

Once they are on the trays you can top each cookie with nuts or chocolate for a bit of Christmas Bling or leave them plain. Bake for 10- 12 minutes or until lightly brown around the edges. Keep an eye on them as I found the 2-3 batches many only need 8- 10 minutes. Remove from the oven and cool on the trays. Store in an airtight container if they last that long.  Makes 30 cookies approx.

They will make great gifts wrapped sipmply in cellophane with a nice ribbon or a nice container. A tin filled with a cookie selection wrapped in a Christmas tea towel, would be a lovely gift idea.

Virtual Cookie Exchange 2019

Welcome to my day on the Virtual Cookie Exchange. Thanks to Carol for organising us in to a well oiled cookie machine pumpimg out cookie recipes for everyone to test and enjoy over the holiday break.
Here is the full list because I know you will want to collect every recipe.


This year my recipe is one that was shared at our annual Project Uninterrupted retreat in September. Beth made these wonderful treats to share with all of us and as soon as I tasted them I knew I was going to have to share the recipe here with all of you. A nice easy recipe that you can whip up at short notice and impress everyone with.

Coconut Biscuits
1 cup desiccated coconut
1 cup of self raising flour
1 cup of castor sugar ( it is a fine white sugar that dissolved quicker for baking)
125  grams butter melted
1 egg
Mix all the ingredients together. Roll  teaspoons of mixtures in balls and put on baking tray. Flatten slightly.

 These will spread so give them extra room on the trays.
 Bake at 160 degrees C for 10-12 minutes so they are slightly golden. Let them cool on the trays as they are still soft when hot. Makes approx. 20 biscuits.

Virtual Cookie Exchange



It is time for me to share my cookie recipe on the Virtual Cookie Exchange. Firstly I would like to thank Carol from Jut Let Me Quilt for hosting us. She does a fantastic job organizing us.
Now if you haven't see the previous day's blogger's here is the full schedule.
So my recipe for this year is a long time Favourite. I know I have been making these cookies since I was a teenager. Now they are generally my Chocolate Chip Cookies but the base cookie dough is so adaptable you can use different ingredients to flavour you cookies. When I fancy a batch and don't have chocolate chips in the house I have swapped them for something else. It is the same with the nuts change to ones you like or what ones you have on hand. I have used almonds, walnuts and pecans.
So here is my recipe.
Chocolate Chip Cookies 
Makes approx 30 cookies depending on the size you want.

Ingredients
2 1/4 cups plain flour
1/8 tsp salt
1 tsp bi carb of soda
250g butter soften
1/2 cup castor sugar
1/2 cup brown sugar
1 tsp vanilla extract
2 eggs
100-200g choc bits
1 cup nuts chopped

Method:
Preheat oven to 180 degree. Sift flour, bi carb,and salt. Cream butter, the two sugars and vanilla. Add the eggs one at a time and the sifted ingredients. This is the basic cookie dough.
Fold in the nuts and choc bits.But like I said earlier these last two ingredients can be change to give you different cookies. This recipe is perfect to use what you have in the pantry. Most of the time I have the base ingredients in mine.
Spoon on to greased baking trays and bake for 10- 12 minutes.
Once done they should be a light golden brown colour. Cool on a rack before storing in a cookie jar or tin.



They are great with a cuppa as a little snack.

It's nearly here!

Whats nearly here? This year's Virtual Cookie Exchange.

 I can tell you there will be plenty of recipes shared starting on the 27th November until the 29th November. You will find my post on the 29th November. Now I am sharing an old family favourite this year and just sharing my recipe will not be enough.You know what that means! I am hitting the kitchen to make a batch or two today.
Here are some of the ingredients that I will be using in my test batch.

My Best Of 2017


Cheryl over are Meadow Mist Designs is holding her annual Best of 2017 Blog Party. It is that time of the year where we can look back at what has happened during 2017.

My favourite five has been put together from a mix on my personal favourite blog post and the ones most visited over 2017.

1.  My Jingle Bells Row Post is the most visited post of the year which was part of the Christmas Caroling Row Along.
2. My spot of the Virtual Cookie Exchange has to be another one of my highlights. Even with my husband argue the point that it is a virtual cookie exchange and was I really suppose to be baking the cookies. I tell you he stopped arguing the point once he was eating the cookies.
3. The Project Uninterrupted Retreat has to make the Top Five. Myself and my team of helpers took 19 ladies away for the weekend for our first Project Uninterrupted Retreat. It was a huge success and we haven't even got home and plans were being made for the 2018 retreat.


4. Two quilts I finished that are among my favourite quilts.This post is a personal favourite.


5.  My Cotton Carnivale trip from March.This trip I took to Noosa was an adventure and so much fun to attend. It just had to make my Top five of the year.
There you go my Top Five of 2017.  I wonder what will happen in 2018. I am sure it will be adventure with everything thrown in.
