Virtual Cookie Exchange



It is time for me to share my cookie recipe on the Virtual Cookie Exchange. Firstly I would like to thank Carol from Jut Let Me Quilt for hosting us. She does a fantastic job organizing us.
Now if you haven't see the previous day's blogger's here is the full schedule.
So my recipe for this year is a long time Favourite. I know I have been making these cookies since I was a teenager. Now they are generally my Chocolate Chip Cookies but the base cookie dough is so adaptable you can use different ingredients to flavour you cookies. When I fancy a batch and don't have chocolate chips in the house I have swapped them for something else. It is the same with the nuts change to ones you like or what ones you have on hand. I have used almonds, walnuts and pecans.
So here is my recipe.
Chocolate Chip Cookies 
Makes approx 30 cookies depending on the size you want.

Ingredients
2 1/4 cups plain flour
1/8 tsp salt
1 tsp bi carb of soda
250g butter soften
1/2 cup castor sugar
1/2 cup brown sugar
1 tsp vanilla extract
2 eggs
100-200g choc bits
1 cup nuts chopped

Method:
Preheat oven to 180 degree. Sift flour, bi carb,and salt. Cream butter, the two sugars and vanilla. Add the eggs one at a time and the sifted ingredients. This is the basic cookie dough.
Fold in the nuts and choc bits.But like I said earlier these last two ingredients can be change to give you different cookies. This recipe is perfect to use what you have in the pantry. Most of the time I have the base ingredients in mine.
Spoon on to greased baking trays and bake for 10- 12 minutes.
Once done they should be a light golden brown colour. Cool on a rack before storing in a cookie jar or tin.



They are great with a cuppa as a little snack.

They look fabulous - especially the part where you were stirring in the chocolate chips. =) So who gets to scrape the cookie dough off the sides of the pan and the spoon? Yum!

Thank you for sharing. I've never heard of castor sugar so that will be the word/item I learn today. Now let me go visit google.

I love a good chocolate chip cookie and these look like a keeper for me...so yummy looking! Cookies seem to be such a large part of Christmas memories. I have to ask what castor sugar is. Plain white sugar or something else? Thank you for hopping with us and doing such a great job showing us how to make those cookies! xo
