This year I have been treating my family and friends with this recipe. Let's just say we have tested this recipe a number of times leading up to this event.
Ice Box Cookies
Ingredients
1 cup Butter, softened
1 cup Icing Sugar, sifted
1/2 cup sugar
1 egg
1 tsp vanilla
2 1/2 cups plain flour, sifted
1/2 tsp salt.
Nuts/ chocolate to top cookies (optional)
Method:
In a mixing bowl cream butter and both sugars. Add egg and vanilla and mix together. Add flour and salt and mix together. Split the mixture into half and roll each half in to a log and wrap in cling film. Repeat with the other half.
Chill logs for at least 2 hours but you can make the dough the day before and chill overnight.
Preheat your oven to 170 degrees C (350 degrees F) while you prepare the cookies.
Remove logs from the fridge and slice in to disks ( about 5mm / 1/8") It's is up to you . Just remind if you cut them thicker they will need a little longer in the oven. Arrange on baking trays leaving space around them. They spread a little bit but not too much.
Once they are on the trays you can top each cookie with nuts or chocolate for a bit of Christmas Bling or leave them plain. Bake for 10- 12 minutes or until lightly brown around the edges. Keep an eye on them as I found the 2-3 batches many only need 8- 10 minutes. Remove from the oven and cool on the trays. Store in an airtight container if they last that long. Makes 30 cookies approx.
They will make great gifts wrapped sipmply in cellophane with a nice ribbon or a nice container. A tin filled with a cookie selection wrapped in a Christmas tea towel, would be a lovely gift idea.
Make sure you visit everyone on the list collect their recipes, don't forget to leave a little love in their comments boxes.

I love the idea of rolling and slicing these yummy looking cookies. Definitely on my baking list! What's your favorite topping on them? Thank you for sharing your recipe and hopping with us!
Happy Virtual Christmas Cookie Exchange, Cynthia! Thank you for the yummy looking cookie recipe. I think I have a very similar recipe in my old recipe box that I have not made in years. We used to add a chocolate "buttons" to the top, when we were children. Later my children put mini peanut butter cups or rolos on the top. These are so easy and delicious, I am adding your recipe to my baking this year. May you and yours have a safe and happy holiday season ... <3 Pat
Simple and charming with lots of way to top them. Great recipe.
These cookies look like my Grandmother's sand tarts. I'll compare the recipe later....as hers are always a bit sketchy!
Thanks so much for the recipe. I used to make these years ago.
Thank you for sharing your recipe! Merry Christmas!
Those cookies look delicious. Thanks for the recipe.
I love these cookies and the memories they evoke! This is the same recipe my Mom made when we were growing up and I still make. I remember slicing glacé cherries to decorate them with. Thank you for bringing back the memories and sharing a recipe for others to enjoy.

These look wonderful! My kind of cookies, thanks for sharing.
YUM! Thanks for the recipe :)
These sound very good! My mom used to make an "icebox" cake. Wish I had that recipe! LOL Thanks for sharing!
Hi Cynthia! Oh, yummy - I remember a recipe similar to this when I was young. I didn't quite get what an icebox was!?! I'll bet these are just as good as that old recipe. Thanks so much for sharing. This is definitely a keeper. ~smile~ Roseanne
These look delicious and easy to make. My kind of cookie! Thanks for sharing the recipe.
Great sounding cookie recipe. I loved all the different nuts that you added to the cookies. Nuts make any things great.
I am a no fuss cook and they sound like my sort of recipe. Thank you for sharing.
That recipe sounds great. I will be making these later in the week. My son has asked me to make some cookies he can take to work to share and these are perfect. I'll get to taste as well but won't get the chance to eat too many.
These sound wonderful. Will be great sitting around the tree with a cup of tea and wonderful music. It's the simple things that keep the holiday merry.
Icebox cookies have always been one of my favourites. I remember my mother making a version that ended up looking like a pink and chocolate checkerboard. The recipe is long gone unfortunately.
yummy cookies
I'd have to put chocolate on my cookie, since I like chocolate much more than nuts. They look very tasty!
